Vegan KFC Style Chicken

Cook time: 20 minutes
Makes 10-12 Chicken Tenders
Ingredients:
- 1 box Deliciou Plant-Based Chicken
- ½ tsp garlic powder
- 1 tsp Deliciou Original Bacon Seasoning (optional)
- 1 cup plain flour
- 1 Tbsp Deliciou Smoky BBQ Bacon Seasoning
- 1 tsp baking powder
- ½ tsp black pepper
- ½ tsp dried thyme
- ½ tsp garlic powder
- 1 cup coconut milk
- ½ cup vegan mayo + 1 tsp Deliciou Smoky BBQ Bacon Seasoning, mixed
- Prepare chicken according to package directions, mixing in ½ tsp salt and ½ tsp garlic powder. Mould into small, thin chicken tenders. Cover and refrigerate until step 4.
- Fill a small saucepan 4cm deep with oil and bring to medium-high heat.
- In a bowl add all the spice mix ingredients and mix well. Scoop out one third of the mix and place on a separate plate.
- Add the coconut milk to the mixture in the bowl and mix to make a very thick batter. Coat each tender with the batter, then roll into the dry spice mix.
- Immediately deep fry battered chicken pieces for about 3 minutes on each side, or until golden. Transfer to paper towel before serving with dipping sauce. Enjoy!
